| Soil and climate | The vines are planted on a plateau corresponding to the 2° terrace of the Tarn river. The Domaine Rotier Terroir is composed of very nice gravelly soils. |

| Climate conditions | In 2021 an exceptional spring frost reduced the red grape harvest by half. The end of spring and the summer were relatively wet. The vine diseases were contained thanks to intense work. The grape harvest took place between September 21st and 28th. |
| Type of winemaking | The different grapes ferment separately at 28 - 30°C. Maceration lasts 3 weeks. |
| Type of ageing | Aged for 20 months in tanks and old barrels. Bottling occured on 2022 December 8th and 9th. |
| Tasting notes | The colour is dark purple. In its youth, this wine presents aromas of black fruit, mingling with notes of liquorice and pepper. On the palate, it is a fruity, fleshy wine, with firm but gentle tannins. |
| Food recommandation | It should be served between 16 and 18°C and matches particularly well with the typical dishes of the Southwest : cassoulet, duck as well as grilled red meats. It may be cellared for 5 - 8 years. |
