Soil and climate | The vines are planted on a plateau corresponding to the 2° terrace of the Tarn river. The Domaine Rotier Terroir is composed of very nice gravelly soils. |
Grape varieties | 2/3 Loin de l'Oeil, 1/3 Sauvignon. This wine is also a vintage blending : 45 % of 2020 matured on lees during one year and 55 % of 2021. |
Climate conditions | In 2021 an exceptional spring frost reduced the white grape harvest by 80 %. The end of spring and the summer were relatively wet. The vine diseases were contained thanks to intense work. The grape harvest took place between September 8th and 17th. |
Type of winemaking | The must fermented at 18°C in tanks. |
Type of ageing | The 2020 vintage was matured in vats on the lees for one year. It was then blended with the 2021 vintage at the end of its fermentation. The resulting wine was then matured for five months on the lees of the 2021. Bottling took place on 30 March 2022. |
Tasting notes | This wine develops intense aromas of peach, pear, tropical fruit and citrus. It is well balanced on the palate. |
Food recommandation | It should be served around 8°C. It will be an excellent aperitif, and will match with delicatessen, seafood, fish and soft goat or ewe cheeses. |
