| Soil and climate | The vines are planted on a plateau corresponding to the 2° terrace of the Tarn river. The Domaine Rotier Terroir is composed of very nice gravelly soils. |

| Climate conditions | Cool nights in August moderated the summer drought and permited a good maturation. Noble rot develops after a rainy week at the beginning of September. A sunny and windy period then concentrated the grapes. They were harvested by hand, in two times, between September 19th and 24th. |
| Type of winemaking | The wine fermented in french oak barrels during one or two month. It keeps an exceptionnal level of residual sugar : 195g/l ! Luckily, this is balanced by an excellent acidity. |
| Type of ageing | In french oak barrels (15% new) during 10 month. Bottling was made on July 13th, 2006. |
| Tasting notes | On the nose, this wine develops scents of abricot, figs and quince. The mouthfeel is rich and opulent. It can be kept very long. With time, you may observe a small sediment. It is proof of a living, natural product but will not affect the taste in any way. |
| Food recommandation | It should be served between 10-12°C. It is stunning on hot foie-gras, strong cheese, tarts and any fruit deserts. It can also been carafed and enjoyed just by itself. It can be cellared more than 10 years. |
